The key to this Mother’s Day brunch is getting everyone (except Mom) involved. These recipes are easy to prepare and, in most cases, include at least one step that even younger chefs can help with! Try serving on a tray with a small vase and flowers, use special dishes, and put on Mom’s favorite music in the background. Then get ready for a feast!
Doesn’t every breakfast start with a good cup of coffee? Whether it’s keurig or a good old-fashioned pot, make it special with a dash of cinnamon or some flavored creamer. Why not serve it in a special Mother’s Day vintage teacup or tie a pretty bow on the handle of her favorite mug?
Bacon Cinnamon Rolls
These will smell amazing as they cook, giving Mom a hint of the good things to come.
- 1 package of Pillsbury Grands Cinnabon Rolls
- 1 package of bacon (leaner would be better)
- 1 TB of maple syrup
Fry the bacon for a few minutes until it just starts to cook and drain it for a minute on a paper towel. Unfurl your cinnamon rolls and lay one slice of bacon in each, then roll back up. Place them in a buttered pan and cook according to instructions. Drizzle with the maple syrup (kid friendly task) and spread with provided cream cheese frosting.
Pina Colada Fruit and Yogurt Parfait
She’ll appreciate the fat-free yogurt after eating those cinnamon rolls.
- 1 cup Chobani Coconut Blended Greek Yogurt
- 1/3 cup Crushed pineapple
- 2 TB Semi-sweet mini chocolate chips
- 1 TB Toasted coconut
- 1 TB Chopped toasted almonds
Mix the crushed pineapple and chocolate chips together. Layer yogurt and fruit in a decorative glass (kid friendly task) top with a few more chocolate chips and a sprinkling of coconut or almonds. Add a miniature parasol to make it truly festive. Above makes one serving.
Fluffy Microwave Omelet
- 3 large eggs, separated
- 1/3 c. mayonnaise
- 2 tbsp. water
- 2 tbsp. butter or margarine
- 1/2 c. shredded cheddar cheese
- Mom’s favorites fillings: mushrooms, asparagus, bacon, chives, olives, etc.
Beat egg whites until soft peaks form. Combine egg yolks, mayonnaise and water; beat until smooth.
Fold yolk mixture into egg whites.
Heat butter in glass baking dish, pie plate, or plate with sides in microwave on high for 15 seconds. Remove and tip plate to cover bottom with melted butter. Pour egg mixture into pie plate (kid friendly task). Microwave on medium for 5 1/2 minutes. Sprinkle one side of omelet with cheese and filling(s). Fold omelet in half using a spatula. Microwave on medium for 1 minute.

Morning Glory Mimosas
- Sparkling Wine or Champagne
- Orange Pineapple Juice
- Pineapple Vodka
Chill all. Pour 2 oz. of wine and 2 oz. of juice into a glass. Stir gently. Add a half shot of vodka and stir again. For kid-friendly version, use ginger ale with the juice!
