Growing up, the best days ever were when I got home from school, and upon entering my house, I was greeted by the warm, delicious smell of my mother’s baking. My absolute favorite was her oatmeal chocolate chip cake. Warm, gooey, and delicious, it was always an utter trial of my patience waiting until it was cool enough to eat. These days, my kids are the ones staring impatiently at the baking pan, imploring it to cool faster.

1 3/4 cups boiling water
1 cup rolled oats
1 cup brown sugar
1 cup white sugar
1 cup margarine
1 3/4 cups all purpose flour
1 tsp. baking soda
1/2 tsp. cinnamon
1 tbsp. cocoa
1 cup chocolate chips, divided
Preheat oven to 350 degrees.
In a large mixing bowl, combine the oats and boiling water, and let stand for 10 minutes. Add brown sugar, white sugar, eggs, and margarine. Mix well.
Stir in flour, baking soda, cinnamon, and cocoa. Fold in 1/2 cup of the chocolate chips.
Pour batter into a greased 9×13 glass baking pan. Sprinkle remaining chocolate chips over the top.
Bake 40 minutes.
(I recommend serving it still slightly warm. Because gooey chocolate chips are the best.)
