My favorite thing to eat summer is fresh salad and fruit. It’s healthy, tasty, and packed with nutrients. I love to eat a salad as a meal, so I usually add in grilled chicken, shrimp or steak. Also, I added one of my favorite on-the-go salad choices. Here are four of my favorites.
Fruit and Sunflower Seed Chicken Salad
This salad is very sweet and tasty. My mom always makes this salad in the summer. If you’re looking for something that sweet and salty then this is an excellent choice. On a bed of romaine lettuce add chicken then all the ingredients on top. It’s delicious!
- Romaine Lettuce,
- Mandarin Oranges
- Sunflower Seeds
- Grilled Chicken Slices
- Chopped Onions
- Raspberry Vinaigrette
Spinach and Grilled Shrimp Salad
This salad is for the sea food lovers out there. You can use shrimp, salmon or tuna with this sald. They all are very tasty options. My favorite to use is shrimp. Feel free to add a variety of seafood options for more taste. If you dislike spinach, you can also use romaine lettuce which had more nutrients than the iceberg.
- Snow Peas
- Green Peppers
- Red Peppers
- Shrimp (can use skewers)
- Italian dressing or vinaigrette of your choice
A refreshing salad that I love to take with me to work and school while I’m on the go is fruit salad. I can use my hands to eat it. Or I can add on the yogurt and granola if I’m able to sit down. Add all these ingredients in a bowl and add yogurt on top. Enjoy! Even better with sprinkled gram crackers or granola on top of the yogurt. You can use all of your favorite fruit choices in this salad, so free to make substitutions.

Mexican Style Salad
I love Mexican food. My friend made this salad at a party once and every one gave plenty of compliments. If you’re on a low carb diet and craving a taco, you will love this salad. Mix all the ingredients together with a pinch of salt and lime. Top with guacamole, cheese and sour cream. It’s like a fiesta in your mouth. Yum!
