Looking for that great tasting, but light late-night snack you won’t feel guilty eating?
The following are some of my favorite snack recipes. I thought of these recipes one rainy night while my husband and I were watching a movie.
The first recipe is a Tropical Fruit Salad: First, cut up the following fresh fruits into one-inch squares; Pineapple, passion fruit, mandarin oranges, and bananas. Put them in a bowl. Add light vanilla yogurt, and sprinkle a little coconut in it. This is also good mixed with any jello of your flavor.
The second recipe is a Kind-of-Light-Weight Banana Split;
4 large Bananas, 1 (8 oz.) pkg. light cream cheese Light cool whip ,2 cups Stevia, 1 small can crushed pineapple, well drained Crushed pecans (optional) ,2 egg whites 1 sm. bag vanilla wafers
Line a 9x13x2 inch dish with vanilla wafers. Slice bananas over wafers. Beat egg whites until stiff. Add Stevia. Mix well. Pour drained pineapple over bananas. Spread egg whites and cream cheese over pineapple. Top with whip cream and sprinkle with pecans. This is good without the pecans as well.
My third favorite snack recipe is Granola Mix;
1 box of Granola cereal and 2 small boxes of Raisins. Mix ingredients in a bowl.
