Mother’s Day is a time to show mom how much you love her. What better way than to make her a delicious Mother’s Day Brunch? Here are a few of my tried and true recipes guaranteed to delight and to taste delicious!
Crème Brûlée French Toast
I know the name is fancy, but it really is simple to make. You do have to do the prep work the night before but the results are well worth the advance notice. Here are the ingredients you need.
- 1/2 cup unsalted butter
- 1 cup packed brown sugar
- 2 tablespoons corn syrup
- 6 (1-inch thick) slices French bread
- 5 eggs
- 1 1/2 cups half-and-half cream
- 1 teaspoon vanilla extract
- 1 teaspoon brandy-based orange liqueur (such as Grand Marnier®)
- 1/4 teaspoon salt
- Pinch of cinnamon (optional)
Now the steps:
Melt the butter in a sauce pan over medium heat. Add in the brown sugar and corn syrup and stir the mixture until all of the sugar is dissolved. Then pour the mixture into a baking dish (9×13 works best and make sure it is at least 2 in deep).
Next slice the bread. If you want a thicker French toast you can make the slices thicker that 1-inch, but just know this will affect cooking times. Lay the slices of bread in a single layer in the baking dish.
Whisk together the cream, eggs, vanilla, liquor and cinnamon (if desired). Pour over the bread. Cover and chill for 8 hours or overnight.
Mother’s Day Morning, preheat the oven to 350 degrees and allow the pan to reach room temperature. Then bake in the oven uncovered for 25-45 mins. It will be fluffy and light brown when done. Serve up and enjoy!
Bacon-Egg Square Crepes
Straight from the idea factory of Martha Stewart comes this brunch gem. For those of us who want our brunch to be just a bit savory as well as sweet. What you need is:
- 4 basic crepes (you can buy these at the store)
- 4 large eggs
- 8 slices of ham (your choice of flavor profile)
- Salt and pepper to taste
- Pinch of chopped chives
So, what to do first?
If you’re already baking the delicious French Toast from above, your oven will already be at 350 degrees, if not, go ahead and preheat that bad boy. Lay the crepes out on a cookie sheet or baking dish. Place two slices of ham on each crepe. Crack an egg in the center of each (be careful you want to try to preserve the yoke).
Next, fold the crepe edges towards the center. Bake them until the egg white is set but the yoke is still runny (or to desired level of doneness for those adverse to runny yokes). This should take 10-12 mins.
For the mom’s that aren’t afraid to spice things up, this is the recipe for you. There are a lot of ways to make them, with many different ingredients. What we have here is the fastest and easiest version, but feel free to add your own twist!
- 6 large eggs
- 6 corn (or flour if you prefer) tortillas (small)
- 1 jar salsa (medium or hot, again to taste)
- 1 cup shredded cheese (or Queso Fresco)
Heat salsa in a skillet (10-inches) until bubbling. Break eggs into skillet (as with the crepe recipe, do this carefully to preserve the yoke). Cover the skillet and allow to simmer for 5-7 minutes or until the eggs are done to your satisfaction.
Warm tortillas while simmering, place 1 tortilla per plate and sprinkle with cheese before placing one egg on each tortilla. Sit back and enjoy!!!
Let’s face it, sometimes mom just needs a sip of luxury. So why not give her that for Mother’s Day Brunch? And why not put the extra Orange Liqueur from the French Toast recipe to good use?
- Dry Champagne
- 8-oz Orange Juice
- 2-oz Orange Liqueur
- Orange Peel Curls (optional)
The key to a good mimosa is to chill the champagne flutes before serving. Put them in the freezer before starting to prepare brunch and they should be ready to go when you are ready to serve. Pour about 2-oz of the orange juice into each flute, then fill almost to the top with champagne (but leave room for a splash of orange liqueur). As you guessed, top the drink off with a little orange liqueur and garnish with an orange peel curl if you’re feeling fancy.
