I have been buying the Costco kale salad mix for some time now. It’s really simple to make because they give you a package of ingredients to add to the salad as well as the dressing packages.
I am currently looking into a way of eating promoted by Dr. Fuhrman called Eat To Live commonly referred to as E2L. This is basically a Vegan diet with few guidelines to follow. I will post more about this “diet” later but for now here is my recipe I make starting with the Costco kale salad mix.
Put all the ingredients into a large bowl (except the dressing packets). Now add the following using whatever quantities you like.
- canned or frozen (thawed) corn
- beans (any kind of canned you like)
- sprouts, I used a mix that I sprouted myself
- raisins, I used golden
- unsalted sunflower seeds
- pumpkin seeds
- Kraft Strawberry Balsamic dressing (only 40 calories) or use your favorite E2L salad dressing.
The so very delicious poppy-seed dressing that comes with the salad has oil and sugar so I don’t believe it is E2L friendly but if you look at it like I do with my ranch (full of dairy) it has to be healthier than some of the alternatives.
That’s it, at least for now until I decide on other ingredients that sound like they would be great additions.
Something I do when putting together my dinner salad is that I take another prepackaged salad mix (iceberg/romaine mix), also bought at Costco (can you tell I shop a lot at Costco?) and I put it into a bowl with anything else I want to add like tomatoes, cucumbers etc. and then I add a great big pile of this kale salad mix right on top of it!
Now I am not perfect in following this diet, like I said I am new at it and I have been a LOVER of ranch dressing (I make my own) for years and years and I have a real hard time getting used to these other dressings that are as far from creamy as you can get. So what I do is have a small container (about 1/4 cup) of my ranch and I will dip my fork in it and then get a large fork full of the salad and eat. This is just enough to satisfy me so that I do not feel deprived and that would certainly aide in my failure in my new adventure.
The way I look at it is that I am eating so much healthier than I was, it has to make a difference and anything is better than continuing on like I have been eating which was getting me nowhere.
