I have tried to make sure that the snacks in our house are healthy and tasty. I enjoy eating, and I enjoy the socialization of mealtime, yet I must take care of my body. I have a crazy work schedule and two households depend upon me, so my health is important. One of my new favorite snacks is black olive walnut hummus.
Black olive walnut hummus goes great with whole-wheat pita tears, carrots, celery, crackers, toasted baguettes, cucumbers, and most all vegetables. It is a new twist on an old favorite. My recipe:
15. 5 ounce can of chickpeas (you can cook your own chickpeas, but I simply do not have the time)
1/2 cup of ground walnuts
1 small can of black olives (it does not matter if they are sliced or whole, just make sure they are pitted)
Two garlic cloves (pressed)
Two tablespoons of virgin olive oil
Salt and pepper to taste
This entire preparation only takes about ten minutes. However, I have discovered that letting the mix sit in the refrigerator before eating makes it more flavorful. Combine all ingredients in a blender set on puree. I like to taste bits and chunks, so I only run it through the blender for about a minute. How coarse or fine you want your hummus is entirely up to you.
For three tablespoons of my hummus you are looking at over 200 calories, you can add coconut oil and almonds to decrease the calorie intake. I find that it so rich, than I never eat the full three tablespoons that I allot myself. I also think of this as a treat. I make it for parties and get-togethers. When I went to purchase it at the market a small container (less than six ounces) cost over $6.00. I like the taste of my homemade concoction better. Enjoy!
