Many like to take mom out for Mother’s Day. You can rise to the occasion and prepare Mom the best brunch she’s ever had. With mom’s taste buds singing, you’ll help to truly make this special day a day to remember!
Valentine French Toast – This is a family recipe handed down from my grandparents who hailed from Louisiana. I’ve tweaked it and now my mom says that I make the best french toast!
Day-old french bread – sliced lengthwise and cut into (2) 4-in. pieces
2 tbsp. cinnamon sugar
1/8 tsp. ground nutmeg
2 tsps. milk
pinch of salt
1 tbsp. butter
1 tsp. vanilla extract
1 tsp. bourbon or rum (optional)
1 tbsp. sifted powdered sugar
maple syrup (or desired topping)
Whisk together cinnamon sugar, eggs, nutmeg, milk, salt, vanilla (and liquor if desired). Melt butter in non-stick skillet over medium heat. Dip bread into whisked mixture then add to skillet once butter melts. Cook approximately 2 minutes on each side. Sift powdered sugar on top. I love to drizzle with maple syrup. To go all out, top with Chantilly cream and strawberries.
Crepes – I finally mastered these in culinary school. It’s all in the flick of the wrist.
6 oz. water
9 oz. milk
3 oz. sugar
1/2 tsp. salt
7 oz. A-P flour
2.5 oz. butter, melted
Whisk eggs, yolks, water & milk. Add sugar, salt & flour – whisk. Stir in butter. Let rest, covered 1 hour before cooking. Heat a small saute’ or crepe pan. Spray with nonstick spray. Pour in 1 oz. batter and swirl immediately to evenly distribute. Cook until very lightly browned (roughly 1 min.) over medium heat. Flip and cook 20 sec. then remove. Repeat until all crepes are cooked then fill with desired fillings like sliced strawberries, whipped cream, blueberries, etc.
Quiche Florentine – I love quiche! From spinach to broccoli to mushroom, quiche for me is a savory pie. Here’s a perfect recipe where you can make sure that mom eats her spinach :)
1/2 c. mayo
1/2 c. half-and-half
4 eggs, beaten
8 oz. cheddar, shredded
10 oz. pk. frozen chopped spinach, thawed, squeezed dry
1/4 c. chopped onion
9-in. unbaked pie shell
1 tsp. salt
1/2 tsp. white pepper
1/4 tsp. paprika
Preheat oven to 400 degrees F. Line a baking sheet with parchment paper. In a bowl, whisk mayo, half-and-half, salt, pepper and paprika until smooth then whisk in eggs. Layer spinach, cheese, onion in pie shell then pour in egg mixture. Place on prepared baking sheet then cover quiche with parchment paper then foil. Bake for 45 min. Remove covers then bake 10-15 min. or until top is golden brown and filling set. Cool and slice like pie.
