Za’atar is a blend of Middle Eastern spices that give lots and lots of flavor to any dish with chicken or fish. Traditionally puts bread before baking it and served with olive oil. The spice mixture contains ground thyme, oregano, marjoram , toasted sesame seed , and may have additional spices , depending on the mixture . It is increasingly easy to find this mix in grocery stores , so you can buy in the store or make your own version using this recipe from Alton Brown. Ingredients 1 whole chicken 3 pounds, separated into pieces Juice of two lemons ( limes ) 2 cloves garlic, finely chopped 1 tablespoon olive oil ⅓ cup spice mixture Za’atar Salt and pepper to taste Instructions
In a bowl mix the lime juice , olive oil , garlic, and Za’atar . Spread the mixture to the chicken and marinate in the refrigerator for at least an hour, preferably overnight . Preheat oven to 425 degrees . Spray a baking sheet with cooking and place the chicken in the pan , make sure that the chicken parts remain separate from one another . If you want , place the chicken on a bed of potatoes, onions, and some green leafy vegetables . Pour the remaining marinade over chicken. Bake for 45 minutes or until juices run clear . Tip: What about chicken used to make sandwiches for lunch or dinner the next day. Put it on pita bread with vegetables and there you have a delicious Middle Eastern food .
