Enough Salmon for about four people
1/2 cup Extra Virgin Olive Oil (I use EVOO)
1 Tablespoon Dijon Mustard
1 Tablespoon Honey
1/4 cup soy sauce
Pickled or fresh ginger to taste
Sea Salt and Black Pepper
Mix together all of the ingredients and pour over Salmon in baking dish. I like to save a bit of the sauce and spoon it over the Salmon after cooking, however, it is not necessary. Bake at 400 degrees at 20 minutes or until flaky with a fork. Sprinkle with fresh ground pepper and sea salt. Ginger is a “superfood” and great for the immune system, while honey also does wonders for the body. Enjoy- guilt free.
