Maybe you’re a picky eater, or you have a picky child, but you shouldn’t let pickiness get in the way of optimal health and proper nutrition! Not all of us are lucky enough to love the taste of bitter greens, but it’s still important to get those nutrients into your body. Here are eight simple, plant-based ways to slip kale into your diet where you’ll notice it the least.
1. Green Smoothies
Green smoothies might look a bit intimidating, but depending on what you put in them, they can actually be very sweet and delicious. Try blending a cup of raw kale with a banana and some super sweet fruit like pineapple, mangoes, and peaches for a delicious and nutritious treat!
2. Kale Pesto
Instead of a traditional basil-based pesto sauce, opt for kale! Blanch the greens first, then process with a splash of olive oil, some nutritional yeast (for a cheesy flavor and extra vitamins), fresh garlic, salt, a squeeze of lemon juice and any nuts or seeds you like (get creative with pecans, walnuts, or sunflower seeds; it’s all good!). Use it to dress your favorite whole wheat pasta, or use it as a sauce or condiment on sandwiches or homemade pizza.
3. Fruity Stir Fry
For another creative take on kale, shred a cup or two and stir fry it with some rice or noodles, tofu or veggie chicken, and mangoes. Splash some pineapple juice in while it fries. The fruit juices will sweeten up the kale while working in harmony with the more savory components of the dish.
4. Tofu Scramble
Another creative way to enjoy kale is to shred it and add it to your tofu scramble. Add it before seasoning with soy sauce, turmeric, and onion. You’ll taste the salty, savory tofu which will overpower the taste of the greens, and you’ll get a nice big dose of proteins and healthy fats with your kale.
5. Shamrock Shake
If you don’t like something healthy, why not just sneak it into dessert? Well, that logic might not work with everything but it certainly works with kale! Blend a cup of kale and a half cup of spinach with some vanilla ice cream and peppermint and vanilla extract. Enjoy a sweet, minty cold treat without the bitter taste of kale.
6. Spaghetti Sauce
Shred the kale and cook it into spaghetti sauce. Make sure to add plenty of extra garlic and other italian seasonings. You’ll hardly notice it’s there!
Who doesn’t love pizza? Shred a cup of kale and layer it on your pizza, under your veggie cheese or other toppings. When it’s been baked in the pizza sauce, it’s sure to taste great, and unlike spinach, kale doesn’t run the risk of getting mushy.
Everyone loves a moist, chocolate brownie! Make it at least somewhat nutritious by folding in a few cups of shredded kale. When those brownies are nice and toasty, fresh out of the oven, I doubt that the veggie will be the first thing on your mind!
