We all grow bored from time to time with the same old side dishes. Why not try something new for a change and surprise your family when they sit down at the dinner table. Here are a few recipes I feel kick things up a notch, I am sure you will find something that you will enjoy.
Cauliflower Fried Rice – I love to order fried rice when my husband and I dine at our local Chinese Food Restaurant. I don’t often make it at home, but this recipe is one I do enjoy making. Such a tasty dish with ingredients such as peas, egg, carrots and scallions this turns out to be one hearty dish considering it has no rice in it. When making this recipe, if you are not familiar with turning your cauliflower into rice, don’t worry it is a very simple process. When using the sesame oil I like to use the dark as it has a much more enjoyable flavor in my opinion.
Crust-less Zucchini Pie – Zucchini is one of my favorite vegetables and I have so many ways that I enjoy cooking it up. Sometimes stuffing it with taco meat and topping it with lots of cheese is one way while simply grilling it with a bit of seasoning on the barbecue is another. This recipe is an amazing way to enjoy zucchini and if you enjoy quiche you surely will enjoy this pie. This is a crust -less pie, which cuts down on the carbohydrates for those who are watching them. I sometimes substitute egg substitute and in my opinion, it does not change the flavor whatsoever. On the other hand, if you want to make it a bit richer or creamy, you can substitute whole milk or half and half in place of the fat free milk. One other substitution I would like to mention is if you are not a fan of whole wheat flour you can use regular white flour.
Saucy Green Bean Bake – Far from the traditional green bean casserole this recipe includes a few more ingredients that make it a whole new and delicious side dish. What I love best of all is that this recipe includes Velveeta cheese which is my favorite to use in other recipes like Nacho Dip, Cheeseburger Chowder, or simply added into macaroni and cheese. This is very easy and quick to make taking only thirty minutes to make, you might even consider making it ahead of time and having it ready to put into the oven at the appropriate time.
Easy Creamed Spinach – If you have read any of my writings you know that I love spinach and enjoy new and different recipes that include it. If you have a love for the old school taste of creamed spinach you will love this new version that is low fat, gluten free and plant based too boot. It only takes 20 minutes to prepare and it is ready for you to dive in and enjoy. You can use either fresh or frozen spinach and get stocked up on your almond products because you will be using almond milk, and almond butter for this recipe. I love adding bacon to this dish to make it a bit hardier .
Zucchini and Yellow Squash Gratin – For the squash lover, here is a great recipe that combines yellow squash and zucchini and turns it into a gratin dish. A welcome change at my dinner table this mixture of vegetables, heavy cream, panko garlic and of course cheese are quickly devoured, leaving nothing but an empty dish that is in little need of washing.
