Whether you want to save money on your daily coffee shop fix or you just want to whip up a caffeinated treat without leaving home, making your own cold coffee drinks is a fun (and relatively simple) option.
While I love enjoying a cold coffee beverage while I’m out, it’s nice to know how to make myself a refreshing treat in the cool comfort of my own home. Note that none of these recipes use sugar substitutes or non-dairy products. That’s just my preference, but your own experiments and substitutions could give you equally yummy results.
Caramel Iced Coffee
About a month ago, I was given a free iced coffee drink at my local Starbucks, something I’d never have ordered on my own but was excited to try for free (many thanks to the lady who forgot to mention her milk preference when she ordered). I enjoyed the customized caramel concoction so much, I tried to replicate it at home. This comes pretty close.
Mix together one cup of brewed coffee and a tablespoon of caramel ice cream topping, until the caramel is melted and well incorporated. I’ve found that the richer the caramel sauce, the better the iced coffee will be, so I like to use thicker caramel rather than squirt-bottle syrup. Add 3/4 cup of half-and-half, and pour over ice. While I haven’t tried it, I think butterscotch would make a great substitution for the caramel.
Bananas Foster Smoothie
If you’re in the mood for a rich, chocolate indulgence, try out this recipe. It’s also a great way to use up leftover coffee in your pot for a treat tomorrow! Fill an ice tray with cool coffee and freeze it. When you’re ready for a delicious dessert coffee treat, blend the coffee ice cubes with half a cup of yogurt, a ripe banana, a tablespoon of chocolate syrup, and a cup of coffee (chilled or at room temperature). Thin as needed with milk, half-and-half, or even a bit of chocolate-flavored coffee creamer.
Iced White Mocha Coffee
This is my go-to comfort drink (it’s also great on rainy afternoons when I want to snuggle up with a good book). It takes a bit of time to prepare, but the results are worth it. Brew cups of coffee and pour into a saucepan. Into this, mix 1/4 white chocolate chips and stir until they are melted and mixed in. Once it’s cooled, pour the coffee into an ice cube tray and freeze. Place the white chocolate coffee cubes into a blender, along with 2 cups of milk, 1/2 cup chocolate syrup, and 1/4 cup white sugar. Blend until smooth and serve immediately. You’ll have enough to share…depending on how much comfort you want to spread around.
Thai Iced, Spiced Coffee
This makes a fantastic finish to a summer dinner, and it smells amazing, too. Brew 4 cups of very strong coffee or espresso, and pour into an unheated saucepan. Add a few drops of almond extract, 1/4 cup sugar, and a teaspoon of ground cardamom into the coffee. Mix, then let it cool. Fill four large glasses with ice and pour 1/2 cup of half-and-half or cream into each. Add the cool coffee mixture to that, and enjoy with three of your favorite people.
