Salads are satisfying and nutritious. Try tomato, bean and cucumber salad as a side dish with your favorite
Things you’ll need:
1 cup boiled beans of any kind (kidney beans, black beans, etc.)
1 cup cut tomatoes
1 cup cut cucumber
1/2 cup fresh cream (fat or low fat)
2 tsp olive oil
2 tsp vinegar
salt and pepper
parsley for garnish
Makes 2 servings
Step 1: Mix tomatoes and cucumber in a bowl and add the boiled beans.
Step 2: Add cream and olive oil. Mix vinegar or lemon juice
Step 3: Sprinkle salt and pepper. Garnish with parsley and serve with bread sticks.
