Yummy vegetable patties can be had as a snack or served as a side dish at the dining table. Enjoy the goodness and taste of a healthy treat!
Things you’ll need:
2 cups mixed cut vegetables of your choice (capsicum, green beans, onions, tomatoes, carrots, beets, squash, etc)
2 tsp olive oil (or vegetable oil)
1 tsp mixed dried herbs
1/2 tsp red chili powder (optional)
Step 1: Boil all the vegetables, mash gently and keep aside.
Step 2: Add the herbs, red chili powder and salt to mix. Make small balls of the vegetable mix and flatten them to discs with your palms.
Step 3: Shallow fry them on a pan flipping them over until golden brown on both the sides. Serve hot with tomato ketchup!
