All vegetable fried rice is filled with carbs and the goodness of vegetables. Feel free to add as many vegetables as you want!
Things you’ll need:
2 cups boiled rice
2 cups cut mixed vegetables( peas, corn, French beans, carrots, capsicum, green onions, tomatoes, etc)
2 tbsp oil ( vegetable oil or olive oil)
2 tsp ginger garlic paste
Salt and pepper
Roughly makes 2 servings of fried rice
Step 1: Warm vegetable or olive oil in a pan. Fry ginger garlic paste until golden brown.
Step 2: Add onions and fry until golden brown. Add all vegetables and fry for 2-3 minutes.
Step 3: Add the boiled rice to the pan and simmer for 1-2 minutes.Remove from pan, sprinkle salt and pepper to serve.
Serving tip: serve with salted yogurt !
